What Aguachile means
Aguachile is a Mexican main dish name of Spanish origin meaning "chile water". It is built from Spanish agua (water) and chile (from Nahuatl chīlli). It is pronounced ah-gwah-CHEE-leh, and it is most associated with Sinaloa.
Named for the liquid, not the seafood: the original Sinaloan aguachile was dried chiltepín ground into water, and the shrimp came later.
