What Recado rojo means
Recado rojo is a Mexican salsa or sauce name of Spanish origin meaning "red seasoning paste". It comes from Spanish recado (message, errand; in Yucatán, a spice paste) + rojo (red). It is pronounced reh-KAH-doh ROH-hoh, and it is most associated with Yucatán.
Recado normally means a message or an errand, and only in Yucatán does it name the pressed spice pastes. The red one takes its colour from achiote, Nahuatl achiotl.
